Pickled Carrots

I bought a bunch of baby (or just farmer’s market sized) carrots last week for a whole dollar. I’ve made pickled carrots in the past from this recipe. They are a delicious snack on a cheese plate, in a salad, or just on their own. They are crunchy, sweet, and savory. Everything I want in a snack.
