April showers + spring time vegetables = asparagus soup! I made asparagus soup for the first time and I’m hooked! I pretty much followed this recipe minus the potatoes, adjusted the water accordingly, and added green garlic plus a dash of cream at the end. I appreciate the simple broth using the parts of the asparagus and leek that most recipes discard. For the garnish, I sautéed up a few of the asparagus tops sliced thinly in half with pine nuts, more green garlic, cracked pepper and lemon zest. Delicious!
