bagels for breakfast for lunch.

I made bagels last weekend. They are pretty fun and easy to make! They are a bit time consuming (total time including rising is about 4 hours) so we ate breakfast for lunch. I prefer the everything bagel so I made a seed mix of sesame, fennel, poppy, and caraway with sea salt and pepper. I searched around for a recipe that fit my needs… a one day process. This is the one I ended up going with but I still tweaked it a bit. I let the dough rise for 2 hours and added a few tablespoons of my sourdough starter. Plus it’s way easier and more fun to shape the dough into a ball and then punch your thumb through the middle then what is suggested. I’m sure there’s a better recipe by a much trusted source but until I find it I’d use this one again. Here’s a peek into the steps…

Boil them a bit on each side.

Brush them with egg wash. Add any toppings.

Bake ’em and eat ’em

I’d like to try pumpernickel next time.
